🥟 Tofu Bokchoy Potstickers! 📷 by @woon.heng 🚨🚨Recipe: ~ 1/2 block of firm tofu, drained and pat dry and cut into small cubes ~ 8 caps of Chinese mushrooms, soaked until soft, chopped ~ 2 tsp black bean sauce (substitute with 2 tsp soy sauce + 1/2 tsp maple syrup) ~ 1lb bok choy, washed and julienned into thin strips ~ 1 package of dumpling wrapper ~ sesame oil ~ salt and pepper to taste Place julienned bok choy in a large bowl with 1/2 tsp salt, using your hands, gently fold all the veggies together. Set aside for 15-20mins. In a heated pan with 1tsp oil, saute mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry tofu cubes until lightly brown. Place both ingredients in a big bowl. Using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy. Add to your tofu mixture, combine well & season. Place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal. Repeat until you are done with your mixture and then pan fry them. In a heated pan with oil, place dumpling, bottom side down and cook until brownish, add enough boiling water to cover part of the dumpling, cover lid. Turn heat to low-medium and let simmer until all water is absorbed. Serve with gingery black vinegar and chili. Do not let performance in one area ruin your day!⁣ ⁣ Not all runs are great runs, and I had a not so great run this morning.⁣ ⁣ ⏰I woke up at the time I wanted to leave my house, causing me to quickly get up, get changed, and go.⁣ ⁣ 🦵🏽My left leg was stiff and not cooperating.⁣ ⁣ 👟I had to stop 2-3 times to adjust my shoe as it felt as if my foot was constantly trying to expand into it.⁣ ⁣ 🐎I could not find my stride at all.⁣ ⁣ 🏡 The entire first couple miles I wanted to stop, turn around, and go back home.⁣ ⁣ But I didn't.⁣ ⁣ I did 4.5 miles on a day I hoped to do 8, and that combined with all the other factors would have normally ruined my ENTIRE day in the past.⁣ ⁣ But here is how I changed my mindset on it all:⁣ ⁣ 1. I acknowledged how grateful I was for my health and for my ability to run.⁣ 2. I smiled or waved at anyone that made eye contact with me.⁣ 3. I reminded myself that no journey worth taking is a straight line and that there was something to learn from the experience this morning.⁣ 4. I made it a point to mentally leave my run in the first part of my day and not carry it into the rest of my day.⁣ 5. What I eat in a day ☀️🌱⁣ ⁣ Today I ate the most amazing mangos for breakfast lunch and snack (Swipe for photos). Hands down best thing I’ve ever eaten (verified by @vitamin.katie 🤩). Not sure what variety they are... Can anyone help on this? They are the size of altaulfo mangos, red on the outside, and taste like Valencia pride mangos. ✨ Would love to know their name 🙏🏼 ⁣ ⁣ For dinner I made a big salad for Evan and I with a cashew-orange-ginger-bell pepper dressing. ‘Twas delicious. Dough 3 cups all purpose flour 1 cup warm water 3 tbsp olive oil 1/4 tsp salt Filling 3 russet potatoes 1/3 cup almond milk (or any non-dairy milk) 1/4 cup vegan sour cream 3 tbsp vegan butter 1/8 tsp black pepper 1/4-1/2 tsp salt (or to taste) 2 oz vegan cheddar cheese, grated 1/2 vidalia onion 1 cup water 3-5 tbsp vegan butter for pan-frying Vegan sour cream for serving METHOD Peel and chop the potatoes. Thinly slice the onions. In a pot with boiling water add the potatoes and cook for 20-30 minutes until fork tender. To caramelize the onions add 1 cup of water into a pan. Add the onions and continuously stir and check on them. Do this at a very low heat. Prepare dough by adding all ingredients into a bowl and using a fork to lightly combine dough together. Once a shaggy dough has formed, spill it out onto a clean surface and begin to knead with hands. This will take about 10 minutes and work until a smooth dough is formed. If the dough feels a little dry add in 1 tbsp of water. Once you can form it into a ball let it rest for 15-20 minutes. Cover it while it rests so it doesn’t dry out. The potatoes should now be done and you can add drain them. Add in the rest of the filling ingredients except the vegan cheese and mash the potatoes. Get it as fluffy and mashed as possible. Once the potatoes are cooled down you can then add in the vegan cheese. Mix to distribute it evenly . I just found out today is Lesbian Visibility Day! 🌈 When I was 11, I was best friends at school with a girl called Susan. Another pupil, Graeme, said we must be ‘lesbians’. At that time, there was no negative connotation to the word as we had no idea what it meant and Graeme didn’t say it in a derogatory way, just matter-of-factly, so we went around saying we were ‘lesbians’, thinking it just meant we were close friends. ⠀ ⠀ Fast-forward four years and I was walking through the local shopping mall and a girl at my school yelled out my name and shouted that I was a ‘lesbian’ in such a way to denote that it was an insult and meant to embarrass and shame me (it worked). From then on, right into my twenties (I came out ‘officially’ aged 20), I hated the word ‘lesbian’.⠀ ⠀ Despite not liking the word, I threw myself into the lesbian scene in London and found myself rejected by some parts of it (namely TERFS and SWERFS who told me my red lipstick and long hair meant I wasn’t a ‘proper’ lesbian, and then after Tracie and I got together in the early 90s told me I couldn’t be a ‘proper’ lesbian if my partner was a trans woman).⠀ ⠀ Nevertheless, I found women who I jived with: High-glam, high-camp, wild, fun, political, open, inclusive, sexy and kind. Both Mira and EzOz came to us unable to walk properly due to neglect. EzOz limped badly, but if you remember, Mira could not stand on her front legs at all. She walked on her knees, and we all expected months and months of physical therapy just to straighten both legs again. We hoped she would walk normally again... someday. . I couldn't find any good avocados at the shops yesterday. So I'm actually having something different for breakfast today😂 Overnight Oats with Banana and Cinnamon. - Approx 3/4 cup of rolled oats - Half cup of Vitasoy almond milk - x1 chopped up banana - x1 spoon of Saunders Malt Extract (High in B12 - bought from woolworths) - Handful of sultanas - Sprinkle with cinnamon Method: Combine ingredients and let it soak overnight in fridge. Coconut Milk Arroz con Leche 🥥 As you know, I rarely ever weight stuff out so this is all an estimate🙈. But basically I cooked 1 cup of rice until al dente (I used sticky rice) then I added a can of coconut milk, 2 cinnamon sticks about 4 tbsp coconut sugar and I cooked it on low for another 10 minutes stirring occasionally so it doesn’t stick. When the rice absorbed the milk I added about 1/4-1/2 cup of almond mylk and a tsp of cinnamon. Cooked for about 5 more minutes. And thats it! Once it cools the rice absorbs the liquid, so when I am about to eat it I add some more milk and top it with cinnamon and any other topping you desire! (Not pictured, but I added mango and it was amazing!) Pistachio butter @kushala_wellness . Arroz Con Leche de Coco 🥥 Como saben yo casi nunca peso nada 🙈. Asi todo es un estimado- Pero básicamente cocine 1 taza de arroz a consistencia al dente (use sticky rice). Una vez al dente, le agregué una lata de leche de coco, 2 palitos de canela, aproximadamente 4 cucharadas de azúcar de coco y lo cociné a fuego lento durante otros 10 minutos, revolviendo ocasionalmente para que no se pegue. El arroz absorbió la leche, asi que le agregué aproximadamente 1/4- 1/2 taza de leche de almendra y una cucharadita de canela en polvo. Lo cocine por otros 5 minutos más. ¡Y tadaaaaa! Cuando se enfría el arroz absorbe el líquido, así que cuando estoy a punto de comerlo, le agrego un poco más de leche de almendra, canela en polvo y cualquier otro topping. (En la foto no aparece, pero me lo comi con mango y delis!) TROPICAL BLUE SMOOTHIE 🍹😋⁣ Move over green smoothie, there’s a new color in town. Aside from just looking pretty, this bowl gets its cool color from blue spirulina—a nutrient-dense aquabotanical that is high in protein & minerals and can help with joint aches and pains. One more superfood to add to the anti-inflammatory toolbox, especially after a workout!⁣ Recipe below 📝👇🏻⁣ ⁣ INGREDIENTS:⁣ 🔹4-6 ounces coconut milk ⁣ 🔹¼ avocado⁣ 🔹1 banana, sliced & frozen⁣ 🔹½ cup frozen pineapple chunks⁣ 🔹Pinch of sea salt⁣ 🔹½-1 teaspoon Blue Majik spirulina (or use any high quality spirulina⁣ ⁣ INSTRUCTIONS:⁣ 1. Blend the coconut milk and avocado until fully combined. ⁣ 2. Add the frozen fruit, and pinch of salt and then blend again until smooth & creamy. ⁣ 3. Good Morning Everyone!🌞⁣⁣ Today’s amazing breakfast Elixir : Blue Chia Pudding💙⁣⁣ ⁣⁣ I love my Blue Chia Pudding with Butterfly Pea Flower tea, layered with soy yogurt and blueberries. Easy to make, gluten-free and vegan. This Chia Pudding looks like from outer space and your kids will love it!! 💙⁣⁣ Recipe below 📝👇🏻⁣⁣ ⁣⁣ INGREDIENTS :⁣⁣ 🔹1 cup water⁣⁣ 🔹3 bags butterfly pea flower tea⁣⁣ 🔹2.5 tbsp white chia seeds⁣⁣ 🔹1/2 cup soy yogurt⁣⁣ 🔹1 banana⁣ 🔹2 tbsp honey⁣⁣ 🔹4 tbsp blueberries fresh or defrosted⁣⁣ ⁣⁣ INSTRUCTIONS :⁣⁣ 1. Bring water to the boil and add 1 bags Butterfly Pea Flower Tea. Let brew for 10 minutes. Then remove tea bag, squeezing it slightly. Add 1 tbsp honey and allow to cool.⁣⁣ 2. Mix chia seeds with the blue tea and mix vigourously for 60 seconds. Allow to rest for at least two hour, stirring once in a while.⁣⁣ 3. In the meanwhile, mix soy yogurt with the content of the the second tea bag (just rip it open). Add 1 tbsp honey and mix in the banana.⁣ 4. Mix blue chia pudding with 4 tbsp blue yogurt. ⁣⁣ 5. Layer blue chia pudding and the remaining blue yogurt in a jar, ⁣⁣ 6. Top with blueberries.⁣⁣ 7. Then add the soy milk, vegetable oil, vinegar, vanilla, lemon extract and lemon zest. Whisk briefly with a hand whisk to combine properly and remove any lumps.⁣⁣ 3. Line a cupcake tray with cupcake liners and divide the batter between them.⁣⁣ 4. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.⁣⁣ 5. When baked transfer to a wire cooling rack and allow to cool completely before frosting.⁣⁣ 7. The main ingredients to make poori are wheat flour, oil and water.⁣ And what’s more , it’s vegan , delightfully delicious and quite easy to make!😊⁣ ⁣Recipe below 📝👇🏻⁣ ⁣⁣ INGREDIENTS:⁣⁣ 🔻2 cup wheat flour⁣⁣ 🔻2 tbsp semolina ⁣⁣ 🔻pinch sugar⁣⁣ 🔻salt to taste⁣⁣ 🔻water - to knead⁣⁣ 🔻oil for deep frying⁣⁣ ⁣ INSTRUCTIONS:⁣⁣ 1. In a wide mixing bowl, add wheat flour, salt, pinch of sugar and semolina. Mix well.⁣⁣ 2. Add water little by little and make a tight, smooth and stiff dough and knead well for 5 minutes.⁣⁣ 3. Add litttle oil and knead for few minutes to make it smooth and soft.⁣⁣ 4. Make small lemon sized balls.⁣ 5. Roll the dough evenly into circles using a rolling pin.⁣⁣ 6. Keep in a plate and cover.⁣⁣ 7. Heat oil in a deep frying pan. When the oil is sufficiently hot, add one puri and press with the ladle to puff up.⁣⁣ 8. Once they puff, turn over.⁣ 9. Fry the poori till it’s golden brown all over.⁣⁣ 10. Remove the poori and place it in a tissue paper to remove the excess oil. Fry all pooris same way.⁣⁣ 11. Bring water to the boil and add 1 bags Butterfly Pea Flower Tea. Let brew for 10 minutes. Then remove tea bag, squeezing it slightly. Add 1 tbsp honey and allow to cool.⁣ 2. Mix chia seeds with the blue tea and mix vigourously for 60 seconds. Allow to rest for at least two hour, stirring once in a while.⁣ 3. In the meanwhile, mix soy jogurt with the content of the the second tea bag (just rip it open). Add 1 tbsp honey.⁣ 4. Mix blue chia pudding with 4 tbsp blue yogurt. ⁣ 5. Add crushed garlic , ginger, chopped tomatoes ,red chilli powder , turmeric and coriander powder and fry without burning the spices.⁣⁣⁣⁣ 4. Now add in cooked daal and mix well ⁣⁣⁣⁣ 5. Add salt to taste.⁣⁣⁣⁣ 6. Adjust the consistency by adding required water.⁣⁣⁣⁣ 7. Asking yourself how I can be better than I was yesterday is far more productive than comparing yourself to others - I know because I’m human and I've been in both places. This is true for any area of your life- personal or professional.⁣ ⁣ Benchmarking yourself against others means you’re setting yourself up for 1 of 2 outcomes:⁣ ⁣ 1.Defeat - if you cannot achieve the same level of success.⁣ OR⁣ 2.Unfulfillment / Emptiness - when you do achieve the same level of success and wonder “is this it?” and “where to next ?”⁣ ⁣ The goal is never to be better than others, but to be better than YOU were yesterday. This can be applied to growing YOUR way.⁣ ⁣ Happiness is found when you stop comparing yourself to other people. Self confidence is not measured by your own capabilities versus that of others ,but by your own NEEDS.⁣ ⁣ So be yourself and dont compare your life to others. There is no comparison between the sun and the moon. VEGAN LEMON CUPCAKES 😋⁣⁣ Deliciously lemony, moist and simple cupcakes with a velvety frosting.⁣⁣ Recipe below 📝👇🏻⁣⁣ ⁣⁣ INGREDIENTS:⁣⁣ For the Cupcakes:⁣⁣ 🔸1 and 3/4 cups All Purpose Flour⁣⁣ 🔸1 cup Sugar⁣⁣ 🔸1 tsp Baking Soda⁣⁣ 🔸1/2 tsp Salt⁣⁣ 🔸1 cup Soy Milk⁣⁣ 🔸1/3 cup Vegetable Oil⁣⁣ 🔸1 Tbsp White Vinegar⁣⁣ 🔸1 tsp Vanilla Extract⁣⁣ 🔸2 tsp Lemon Extract⁣⁣ 🔸1 Tbsp Lemon Zest⁣⁣ For the Lemon Buttercream Frosting:⁣⁣ 🔸3 cups Powdered Sugar⁣⁣ 🔸1/3 cup Vegan Butter⁣⁣ 🔸2 Tbsp Lemon Juice⁣⁣ 🔸1 tsp Lemon Extract⁣⁣ For Decoration:⁣⁣ 🔸Lemon Zest⁣⁣ ⁣⁣ INSTRUCTIONS⁣⁣ 1. Preheat the oven to 350°F (180°C).⁣⁣ 2. Sift the flour into a mixing bowl and add the sugar, baking soda and salt. Then add the soy milk, vegetable oil, vinegar, vanilla, lemon extract and lemon zest. Whisk briefly with a hand whisk to combine properly and remove any lumps.⁣⁣ 3. Line a cupcake tray with cupcake liners and divide the batter between them.⁣⁣ 4. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.⁣⁣ 5. When baked transfer to a wire cooling rack and allow to cool completely before frosting.⁣⁣ 7. Prepare your frosting by adding the powdered sugar, vegan butter, lemon juice and lemon essence to an electric mixing bowl. Start at slow speed and gradually increase speed until smooth and thick. If it’s too thick, add a little more lemon juice until you reach the right consistency.⁣⁣ 8. Good Morning Everyone!🌞⁣ Happy Monday 🌷⁣ Today’s Breakfast Special: Soft puffy pooris 😋🍽⁣⁣ ⁣⁣ Poori also spelled as puri, is a popular recipe across South India. The main ingredients to make poori are wheat flour, oil and water.⁣ And what’s more , it’s vegan , delightfully delicious and quite easy to make!😊⁣ ⁣Recipe below 📝👇🏻⁣ ⁣⁣ INGREDIENTS:⁣⁣ 🔻2 cup wheat flour⁣⁣ 🔻2 tbsp semolina ⁣⁣ 🔻pinch sugar⁣⁣ 🔻salt to taste⁣⁣ 🔻water - to knead⁣⁣ 🔻oil for deep frying⁣⁣ ⁣ INSTRUCTIONS:⁣⁣ 1. In a wide mixing bowl, add wheat flour, salt, pinch of sugar and semolina. Mix well.⁣⁣ 2. Add water little by little and make a tight, smooth and stiff dough and knead well for 5 minutes.⁣⁣ 3. Add litttle oil and knead for few minutes to make it smooth and soft.⁣⁣ 4. Make small lemon sized balls.⁣ 5. Roll the dough evenly into circles using a rolling pin.⁣⁣ 6. Keep in a plate and cover.⁣⁣ 7. Heat oil in a deep frying pan. When the oil is sufficiently hot, add one puri and press with the ladle to puff up.⁣⁣ 8. Once they puff, turn over.⁣ 9. Fry the poori till it’s golden brown all over.⁣⁣ 10. Remove the poori and place it in a tissue paper to remove the excess oil. Fry all pooris same way.⁣⁣ 11.
