🍕Kids Prep: Pizza Pockets + Veggies + Hummus🥕 Prepped for my kiddo, but I loved this one too! Kinda a lazy calzone with a side of marinara for dipping. . (GF, vegetarian, 35-40 minutes, 4 servings) ~For the pizza pockets: 1 box pizza dough mix 8 oz. mozzarella (I used fresh), sliced 1/4 c. canned mushrooms and 1/4 c. canned olive slices (or any other preferred pizza toppings) 1 1/2 c. marinara sauce . 4 servings carrots 4 servings snap peas 4 servings hummus 8 Hershey’s Kisses . 1. Preheat the oven to 450 degrees. Spray a baking sheet with non-stick spray or line with a silicone baking mat. 2. Prepare the pizza dough according to package directions. Roll the pizza dough out, using flour as needed, into a 12 inch square. 3. Spread a spoonful of marinara on the dough, leaving a 1-inch edge. Arrange 2 oz. of the cheese on top of the sauce. Add a small amount of the chosen toppings (I used 1 T. each of the mushrooms and olives). Fold the dough in half and press to seal. If needed, use wet hands to press any holes closed. 4. Bake at 450 degrees for 15 to 20 minutes until the dough has browned. 5. Let cool completely before adding to a container. Serve with a side of marinara sauce. Best if warmed, but it can be served cold if needed. . ~Storage: 4 days. ~Freezer: 😀 (pizza pocket only).

Last dinner post for the week! More foods you can make in one pot! Stir fry’s are fun & diverse and are great one pan meals. I typically use grapeseed oil for stir fry’s because they can withstand a higher temperature. I’ve seen people use coconut oil but I don’t personally like the flavor change. But do what works for you! I recommend first browning your onions & garlic in the oil then adding your meat and veggies toward the end. Stir fry’s are also a great way to use whatever you have left in the fridge by the end of the week!   #SimplifySeptember   ( 1 / 3 )

» Work snackin’ My go-to carbohydrate source is oatmeal & fruit! Then combine them and magic happens✨ This took roughly 45sec to make! I bought prepackaged oatmeal from   @traderjoes   it has chia seeds & pumpkin seeds too. Dumped it into a   @pyrexhome   and added some dried crans a n d wild blubs! I store it in my cooler lunch bag & add water// microwave when ready to eat. Easy as 1.. 2.. 3.. What’re your favorite healthy snacks? p.s. Ingredients 4 Skinless boneless chicken breasts about 1 1/2 lb. 1 Tsp Italian seasoning mix 1 Tsp Garlic Powder 1 Tsp Smoked Paprika Sea salt and pepper 12 Asparagus stalks end trimmed 1 oz Sun-dried Tomatoes chopped 4 slices Mozzarella Cheese 1 Tbsp Olive Oil Instructions Preheat your oven to 400 F. Place the chicken on a clean chopping board and sprinkle with Italian seasoning, garlic powder, paprika, salt, and pepper. Start cutting each one lengthwise to create the pockets. Be careful not to cut all the way through. Add 3 sprigs of asparagus and a couple of pieces of sun-dried tomatoes to a mozzarella slice, then roll it to hold them inside. Stuff the chicken breasts with it. Close the pocket with a toothpick. Heat oil in a large and cast iron skillet over medium-high heat. Add in the chicken and sear it until nicely golden brown, about 3-5 minutes per side. Bake the chicken for 15-20 minutes, or until the cooked through and no longer pink in the inside.
