Walked myself down a block from my 🥊 session this morning for a nice cool down, and took myself out for a cup of coffee ☺️. And obvs, I packed a #breakfast 😂. Two gorgeous jammy eggs from @localcoolingfarms/ @laughingbuddhanursery farm hub, some strawberries, lemon rosemary pecans, guacamole, and some salami. So good! I ordered a cold brew coffee while I was still hot and sweaty; sucked down half of it before realizing this is definitely not plain black coffee 😬. But at least it tastes good?? Whatever it is 🙃😂. Jammy eggs were made in my #instantpot- I followed @telechronn’s lead and cooked them under high pressure for only a couple of minutes, let them sit in the #pressurecooker for five more, then in an ice bath until cool. Airplane coffee, sparkling water, and regular water are my 3 go to drinks while traveling. It's an easy way to stay hydrated on the plane. Any flight under 7 hours, I'll just eat when I get to where I'm going. I also will have my last meal about 4 hours prior to travel. This helps to not get air sick. Serves 4. ...🍅 1 tablespoon extra virgin olive oil 1 yellow onion, diced 3 cloves garlic, minced 1 (28 ounce) can diced tomatoes (low-sodium if possible) 4 cups chicken or vegetable broth 1/4 - 1/2 teaspoon fresh ground black pepper 180 ml Unsweetened almond milk 1 loosely packed cut of basil, chopped ...🍅 Heat olive oil in a stockpot over a medium heat. Add onions and sauté until soft and translucent, stirring occasionally. Add the garlic and cook an additional minute until fragrant. Stir in the tomatoes and broth, then season with fresh ground black pepper. Bring the soup to a boil, then lower to a simmer for 20-25 minutes. Then blend. Stir in the almond milk and basil and let simmer for at least 15 minutes, allowing the soup to reduce and thicken. So, pretty obvious that I missed posting the 1 day of my holiday yesterday so here's a bit of a 2 in 1... [Tuesday 23rd April] Didn't really do too much on this day. Got ready quite late and then just sat on the beach contemplating a bunch of different things in life. My head was going sort of crazy but at the same time, it was probably the most calm it has been all week so far. Felt disgusting all day also but I wrapped myself up in a bunch of baggy clothes which helped. On evening, I was honestly so tired as well that again, barely did anything. Really makes me feel horrible being lazy however not much I could do. Ate a mini egg ice-cream (photo 3) whilst out still though which felt like a waste for some reason but it was nice so oh well. [Wednesday 24th April] This day was probably a million times better for the most part. Went shopping for majority of the time and picked up some nice new things. Also, played frezzbe on the beach for a while and went to an arcade. Overall very positive although by the evening it had sort of all fell apart. Felt particularly self-conscious and really unconfident especially as my family and I went to a pub to eat. Got chips, a grilled portobello mushroom and halloumi burger and ketchup (photo 1) which was very tasty but gosh, did it create alot of guilt. Plus, while shopping my mom and I desided to share a cherry and almond croissant (photo 2) which again was great but made me feel terrible. Hope you're ok!
