Sweet potato tagine with aubergine, chickpeas and green beans🍠🍆 Start off by sweating onions and 2 cloves garlic in a little oil. Once softened, add 2 tbsp of tomato purée and your spice mix: 1 tsp cinnamon, 2 tsp cumin, 1 tsp fenugreek, 1/2 tsp cayenne pepper. Allow spices to “wake up” in the pot with the onions, garlic and tomato purée for 2 mins. Next add 1 aubergine, chopped into bite sized chunks along with 3 tbsp of soy sauce. Turn the heat to medium and cook until aubergines start to soften. Now time to add your tin of tomatoes, 1 chopped sweet potato, full packet of green beans, 4 tbsp apple cider vinegar, 2 tbsp sugar and a tsp salt. Use the tin of tomatoes to measure 1 full tin of water and add. Bring to a boil and simmer for 20/25 mins or until the sweet potatoes are soft with a fork. About 10 mins before the end add your tin of chickpeas and a good bunch of chopped parsley. I don’t need to tell you how great vegetables are for you, but just maybe I need to sell you on the delicious “snackability” of these nutritional powerhouses. ‍ Veggies contain fiber and water to help fill you up, and you don't need me to tell you about their vitamins, minerals, and antioxidants, right? ‍ You can easily open a bag of baby carrots and/or cherry tomatoes and give them a quick rinse (they’re already bite-sized). Have you put almond butter on celery? Use a bit of dip. How about hummus? ‍ Need a new dip for your veggies? This one is fantastic! ‍ Hummus Vegetable Dip ‍ Makes about 2 cups ‍ 1 can chickpeas (garbanzo beans), drained & rinsed ⅓ cup tahini 1 garlic clove 2 tbsp sesame oil 2 tbsp lemon juice 1 dash salt 1 dash pepper ‍ 1. Put all ingredients into a food processor and blend until smooth. You may need to thin it out with a bit of water, so add in 1 or 2 tablespoons at a time and blend. ‍ Serve & enjoy! ‍ Tip: Don’t like sesame? This was a yummy, easy, healthy dinner the other night. I don't generally make elaborate dinners so I often don't share on here. However, I'm sure there are other busy people out there who want to see simple, easy dinners for nights when they're up against it timewise so I'll try to share more for a bit of inspiration. 🍽 I often have some sort of beans/chickpeas/rice/quinoa/pasta/potato combo as I find them so quick and easy to chuck together and always have ingredients on hand. 🍽 Lebanese style black eye beans and chickpeas. Fried up frozen chopped garlic and onions (told you it was an easy one!) with peppers, mushrooms and courgette. Once soft add chopped toms, tom purée, beans and chickpeas, ras el hanout spices, cumin, smoked paprika, cinnamon. Simmer until soft and delicious. Serve with salad, wholemeal pittas or brown rice. Drizzle with tahini, sprinkle with chilli flakes, toasted sesame seeds and a squeeze of lemon. 🍽 This is such a wholesome dish packing a great nutritional punch. You're getting protein and fibre from the brown rice and beans/chickpeas. Calcium from the tahini and sesame seeds. Magnesium from the rice. It's full of veggie goodness and leaves you feeling full but not uncomfortable. Beetroot hummus with avocado & sesame seeds on my bread. Just looking at this snack gives me an energy boost (which I totally need as my husband is travelling and I am the supermom this week😅). My picky little toddler is a great fan of my beetroot hummus too! She doesn't like regular hummus, but when I add roasted beetroot in, it becomes a hit.✌ The taste is slightly sweet and I make it extra smooth and fluffy.

Ergibt mit Beilage ca. 4 Portionen: - 2 Zwiebeln - 1 Knoblauchzehe - 1 El Kokosöl - 1 Dose Kichererbsen - 100 Gramm Berglinsen - 1 Zucchini - 1 Paprika - 1 Aubergine - 2 Möhren - 400 Gramm gestückelte Tomaten - Ca. 200-300 ml Wasser - 2 EL Tomatenmark - 2 tl Curry oder Indian Allrounder von @justspices - 1/2 Tl Cayennepfeffer - 1/2 Tl Kreuzkümmel - Salz - Optional Zitronen-/ Limettensaft und Petersilie Zuerst Zwiebeln und Knoblauch im Öl anbraten, bis die Zwiebel glasig ist. Nun für 5 Minuten Karotten und Linsen mit andünsten. Anschließend alle weiteren Zutaten bis auf die Kichererbsen hinzugeben und ca. 25 Minuten köcheln lassen. Chickpea and Cauliflower Falafel. A hearty meal with battered and baked sweet potato wedges. . No deep frying involved in this meal as the falafel are baked too. Just as yummy and cuts out some of the heaviness that a fried meal can have. I'm serving it with my fave dip, tzatziki!! LOVE that stuff!!! . Falafel for 4, (with a few left over for lunch the next day too!): Mix the following in food processor, shape, coat in breadcrumbs and brush/ spray with olive oil before baking at 180c/ 350f for 20 mins or until golden : 2 tins chickpeas 1 small cauliflower whizzed in food processor and baked with olive oil for 15 mins 3 T nutritional yeast 2 T tahini 3 T cornstarch 5 cloves garlic a good handful of fresh parsley 1/2 a lemon squeezed 2 T olive oil 1 t ground coriander 1 t cumin 1 t salt breadcrumbs extra olive oil to spray or brush onto falafel balls . S příchodem jara vždycky přijde chuť na něco zeleného. Tento falafel je tak zelený, že svěží vítr do kuchyně prinese, už jenom svou nádhernou barvou. Po sdílení pesta z medvědího česneku vyzkoušejte i tento falafel. 👇👇👇 Falafel jsou smažené kuličky nebo malé karbanátky z hmoty vytvořené nejčastěji z cizrny. Smaží se a podává se v pita chlebu s rajčaty, salátem a česnekovým jogurtem s bylinkami. Hrnek suché cizrny dáme na 12 až 20 hodin namořit do studené vody. Miska musí být dostatečně velká a vody musí byt víc než trojnásobné množství, aby cizrna měla z čeho a kam nabobtnat. Dál je třeba 1 šálek nasekané zelené jarní cibule,  ½ šálku nasekaného medvědího česneku, cesnek, 1 polévková lžíce mletého římského kmínu, 1,5 lžičky soli, ½ lžičky pepře, špetka koriandru suchého nebo hrst čerstvého.  Příprava: Všechny ingredience rozmixujeme, osolíme, přidáme koření a dáme na 20 minut do lednice. Poté tvarujeme drobné karbanátky nebo kuličky (3-4 cm v průměru) a důkladně je mačkáme, aby držely pohromadě.
