For dinner tonight, I was in the mood for Thai style peanut noodle. It all started with onions and garlic in a pan with filtered water. Next I added carrots, green peppers, and ginger. While that cooked, I boiled rice noodles and put together the sauce. I used rice vinegar, apple cider vinegar, molasses, blue agave (1 TBSP of each), and peanut butter (2 TBSP). Then I added chickpeas to the pan along with the sauce and noodles. I mized it all together for a creamy, savory, delectable meal. For dessert, I made a berry banana smoothie bowl. I used blueberries, strawberries, banana, and almond milk. I topped it with chia seeds, sliced banana, and non dairy chocolate chips. This made for an incredible Thursday meal.
