VEGGIE PROTOCOL: NINE CUPS IN NINE DAYS
If you are not familiar with Dr. Terry Wahls, she is the leader in the Paleo movement. Her protocol is all about feeling the mitochondria in our bodies with nine cups of veggies/fruits every day. Mitochondria are the cell's power producers. They convert food molecules into the energy our cells need to do their jobs. They also coordinate communication between cells, and every function in our body depends on them. Every cell contains mitochondria, and some cells contain thousands of them.
I am going to be having about 3 cups worth of veggies per meal. Whether they are in juice form, smoothie form, of physical form. They will be lightly sautéed or raw. I am not going to force myself to eat 9 cups a day if it’s too much for me. In fact, I am going to listen to my body and see how it feels with each meal I eat. If I start to notice something wonky, well, time to start getting even more in tune with myself.
Typically a day will look like this: 3 cups of leafy green veggies, 3 cups of sulfur-rich veggies, and 3 cups of colorful veggies and fruits.
*Again, this will/could change depending on my body and how it feels.
Ideally my veggies/fruits WILL be organic as well as local.
I plan to rotate veggies and try as many as I can throughout the next 9 days (and beyond) to introduce myself to new things and listen to what my body is telling me with each veggie that is brought my way.
Please keep in mind that I am not fully eliminating things that could drop my blood sugar, lower my iron deficiency, or B12 issues either. So yes, since I am TRANSITIONING to a plant based diet, I will be having meat. Please understand that I have eliminated cheese, milk, yogurt, and seafood. And I am continue to work with my body to eliminate other “meats/dairy/etc.,” In other words, I am just “upping” my fruits/veggies throughout the day.
