I still remember the first time I tried Vietnamese food. It was my first year of culinary school and I was still fairly new to the different cuisines of the world. When I tried my first bowl of Vietnamese rice noodles, I knew I was in love and have been ever since. So today, I recreated one of my favorites...a rice noodle salad with a spicy peanut dressing. Just had to soak the noodles in hot water for 5 minutes and they were ready to go. I also love the crunch of fresh veggies so I used lettuce, red cabbage, carrots, sweet yellow peppers, shiitake mushrooms and some jalapeños for a bit of a kick. Turned out delicious and I was really happy with myself. Yo me hago un cuadrado individual porque soy sola en casa (mamá come distinto) entonces lo hago en la punta de la budinera jajaj no voy a poner cantidades pero ustedes pueden hacer una fuente grande para toda la familia! 👨‍👩‍👧‍👦 Necesitas: -lentejas hervidas -puré de calabaza 🎃 -morrón y cebollita picado y salteados -1 cucharada de queso rallado @lacteos.milky -cubitos de queso magro @lacteos.milky -condimentos: paprika orégano condimento verde, comino y pimienta -semillas de lino . 1)previamente remojadas hervir las lentejas, hervir calabacín y hacerlo puré, picar y saltear el morrón y la cebolla. Podes obviar este paso si hiciste #mealprep 2)en un bowl mezclar las lentejas, las verduras salteadas, queso rallado y los cubitos de queso y condimentos. 3)forrar la budinera con papel aluminio para que sea más fácil desmoldarlo(por lo menos yo que me hice un cuadradito 😂) Y poner la base de las lentejas. Luego poner como capa de arriba el puré de calabaza y espolvorearle una pizca de pimienta y las semillas de lino. 4)llevar al horno hasta que quede firme y los cubitos estén derretidos. . Pueden obviar el queso y hacerlo #vegano También tengo el mismo pastel pero con una variante distinta, quieren la receta? 🍳🥗🥘Meal prep🥘🥗🍳⠀ We’ve been doing meal prep for over 2 months now so I guess it may be the time to reflect on the whole thing🤔👩🏼‍🍳⠀ 1️⃣ It's not easy at all and it consumes so much time.⠀ Especially if you care what you eat and value variety, you’re short on budget and have health issues limiting your choice. You gotta be creative🤪⠀ 2️⃣ You may realize that not so many dishes are yummy the next day, forget about 2 days after. With some of them, you have to practically convince yourself that it's for the greater good, be it a better body or saving money for traveling🙏🏻😻⠀ 3️⃣ You gotta find your inner power and hidden source of energy. Otherwise, you won't be able to stay for 2 hours in the kitchen after 8 hours working in the office🤕⠀ 4️⃣ You gotta plan your social life well enough not to interrupt the meal prep plan.⠀ So I can't really meet up with friends on Sundays, Tuesdays and partly Thursdays. These are my happy housewife cooking days🥴⠀ 5️⃣ You gotta share your responsibilities with your second half. If both of you work the same hours it seems fair to cook the meals together. Thats what we do. I cook and he helps me cleaning, peeling veggies, etc😅⠀ So, here are major the inconveniences you may experience with meal prep. This past week was the first week of season we got to that and it makes me so happy. . The mustard greens in the puttanesca and in the vegetarian dish are AMAZING! I’ll be honest, it tasted even better pulling a leaf off the plant and stuffing it in my mouth while at the farm. I’ve been pulling my reusable produce bag out of the fridge and snacking on these greens raw and without dressing. They are that good. . The cod dish this week also features whole lettuce heads from Bonnie’s farm. They make up a very simple salad, just lettuce and our lemon-dill aioli, because the produce is so good we thought simplicity was the best way to showcase. . I’m going to wake up with plenty of time and make a breakfast full of vegetables and micronutrients. I’m going to sit at my table and eat said vegetable-laden meal with real utensils in a leisurely fashion before I begin my day. Everything is fabulous in this nutritious and very adulty world. What actually happens: My alarm goes off and I press snooze at least twice before I finally drag myself out of bed. I wake up with enough time to start the coffee maker and brush my teeth. I microwave instant oatmeal and slap it into a plastic deli container and eat it in my car with a plastic camping spork while stopped at traffic lights. There are no vegetables to be had in this story. Adulting seems scarce. Enter this delicious breakfast bread to the rescue. You can make it ahead of time and then eat it all week. It’s gluten free, dairy free, and refined sugar free. AND it’s got 3 cups of vegetables in it, plus a ton of other micronutrients and antioxidants. It may not be my grand plans (delusions, tbh) of breakfast, but it sure fits my reality much better and helps me stay on top of my nutrition goals. I’ll call it a win.

VEGGIE PROTOCOL: NINE CUPS IN NINE DAYS If you are not familiar with Dr. Terry Wahls, she is the leader in the Paleo movement. Her protocol is all about feeling the mitochondria in our bodies with nine cups of veggies/fruits every day. Mitochondria are the cell's power producers. They convert food molecules into the energy our cells need to do their jobs. They also coordinate communication between cells, and every function in our body depends on them. Every cell contains mitochondria, and some cells contain thousands of them. I am going to be having about 3 cups worth of veggies per meal. Whether they are in juice form, smoothie form, of physical form. They will be lightly sautéed or raw. I am not going to force myself to eat 9 cups a day if it’s too much for me. In fact, I am going to listen to my body and see how it feels with each meal I eat. If I start to notice something wonky, well, time to start getting even more in tune with myself. Typically a day will look like this: 3 cups of leafy green veggies, 3 cups of sulfur-rich veggies, and 3 cups of colorful veggies and fruits. *Again, this will/could change depending on my body and how it feels. Ideally my veggies/fruits WILL be organic as well as local. I plan to rotate veggies and try as many as I can throughout the next 9 days (and beyond) to introduce myself to new things and listen to what my body is telling me with each veggie that is brought my way. Please keep in mind that I am not fully eliminating things that could drop my blood sugar, lower my iron deficiency, or B12 issues either. So yes, since I am TRANSITIONING to a plant based diet, I will be having meat. Please understand that I have eliminated cheese, milk, yogurt, and seafood. And I am continue to work with my body to eliminate other “meats/dairy/etc.,” In other words, I am just “upping” my fruits/veggies throughout the day. You can find Bonnie at the farmers markets with her gorgeous produce that is lovingly grown 200 yards from my house; Stella and I walked down there last week. . Whenever she has wholesale produce available, we make every effort to get it into the Local Rhoots bags for our customers. This past week was the first week of season we got to that and it makes me so happy. . The mustard greens in the puttanesca and in the vegetarian dish are AMAZING! I’ll be honest, it tasted even better pulling a leaf off the plant and stuffing it in my mouth while at the farm. I’ve been pulling my reusable produce bag out of the fridge and snacking on these greens raw and without dressing. They are that good. . The cod dish this week also features whole lettuce heads from Bonnie’s farm. They make up a very simple salad, just lettuce and our lemon-dill aioli, because the produce is so good we thought simplicity was the best way to showcase. . Now that local growing season is in full swing, we look forward to bringing you produce from Bonnie and other local growers every week.
