Photo by   @simplyhealthymama   ・・・ Sheet Pan Lemon Garlic Butter Chicken & Veggies✨ I absolutely love sheet pan dinners and this roasted chicken + veggie meal is on constant repeat at my house - so addicting! I like to spatchcock (butterfly) the chicken which flattens it and evenly exposes heat to the breast, thigh, and legs. This yields a CRISPY and flavorful skin on the outside, and a juicy chicken on the inside - YUM! I used a whole organic chicken from   @traderjoes   (approx 4-4.5 lbs), roasted it with a butter/parsley mixture and seasoned veggies. . . Butter mixture: 4 Tbsp Unsalted Butter, softened (I used Vital Farms pasture-raised butter) 1 tsp Pink salt Pinch of black pepper 1 Tbsp dried parsley 1 tsp onion powder 1 Tbsp Avocado oil 3 garlic cloves, minced Juice of 1/2 lemon 👇🏻 1. Spatchcock chicken by placing it breast side down on a cutting board, removing the spine and opening up the rib cage with a heavy knife, this flattens the chicken - if you've never done this before, YouTube a how-to!😜Season under the chicken with pink salt and pepper. Flip chicken over and press down to flatten it. **I like to let my chicken sit at room temperature for 30min before workin on it! 2. Set chicken on a lined rimmed baking sheet with parchment paper - pat dry. In a small bowl, combine butter mixture ingredients and stuff half of the mixture under the skin of the breast, thigh, and drumstick areas. Spread the remaining mixture all over the top of the chicken. Drizzle avocado oil and season outside of chicken with more pink salt + pepper. 3. Preheat oven to 425F. 4. Chop up potatoes + carrots + mushroom + onion + asparagus (thick) or green beans + lemon slices for garnish and place them all around the chicken. Drizzle the veggies with avocado oil and season with pink salt + pepper + paprika + garlic powder. 5. Bake at 425F on the middle rack, uncovered for 45-50 min. Let chicken rest at room temp for about 15 minures before carving it and serving. Enjoy!💛

Avocado Pesto Pasta 💜 (Serves 1) Ingredients: 3oz (dry weight) of your favorite egg-free pasta 2 tbsp pine nuts 2-3 tbsp vegan pesto 1/2 small, ripe avocado (mashed) Sea salt to taste (optional) Directions: 1. Cook the pasta according to package instructions. 2. In a non stick pan, toast the pine nuts over medium to high heat for 2-3 minutes (depending on the kind of stove top you’re using). 3. Mix the pesto with the avocado and serve everything in a bowl. 4. I get messages from complete strangers asking about my relationship, asking when I’ll get married & asking why I haven’t got children yet as I’m ‘getting on’. It’s annoying & to be honest, it’s downright rude. ..... ..... What business is it of other people? Why do they feel the need to comment on my life? I’m HAPPY and honestly, that’s all that really matters. ..... ..... If you’re going to ask an old friend a question or worse yet, someone you don’t even know; let your first question be “HOW ARE YOU” or ask if they’re happy or living their best life? Ask them if they’re ok? - You might be the first person to check in with them! ...... ...... To all my   #ladies   (and men) who feel behind in life… trust me YOU ARE NOT! Although it might feel like everyone around you is getting married, having   #kids   or growing up… it’s just your focus. Trust me that there are equal if not more people starting new relationships, ending relationships, going back to uni, starting uni, travelling the world, throwing in their jobs or changing careers to purse what truly sets their soul on fire. Omega-3's are the kind of fat that most diets are lacking. Omega- 3 fats help improve heart and brain health, prevent diseases and fight inflammation. Your body cannot make this type of fat, which is why it is also an ”essential fat”. It is a good idea to eat fatty fish such as salmon twice a week for optimal health. However… not all salmon is created equal, unfortunately. Today, a lot of the salmon we eat isn’t caught in the wild, but bred in fish farms. Half of the salmon sold worldwide comes from so-called fish farms, also known as aquacultures. Wild Salmon vs Farmed Salmon 🐟. ∙ ◆ WILD SALMON 🐟. 📍 Contains less calories and less fat than farmed. 📍Eats natural food in the wild. 📍Less pesticides and antibiotics (especially carcinogenic PCBs). 📍No artificial colouring to make the fish more pink. 📍Rich in omega-3s. 📍higher in minerals, calcium, iron, potassium, zinc. ∙ ◆ FARMED SALMON 🐟. 📍 Higher in calories and saturated fat. 📍 Are caged in tight pens throughout their lives and are typically fed grain products and a fish-based diet. 📍Fed an unnatural processed diet of grains and soy in order to produce larger fish. 📍Contains high concentrations of PCBs (pesticides, dioxins etc). 📍Contains artificial colouring, toxic byproducts and antibiotics. 📍More vitamin C (added to feed), sodium, phosphorus. ✔️ BOTTOM LINE ∙ Wild salmon contains more minerals. Farmed salmon is higher in Vitamin C, saturated fat, polyunsaturated fatty acids and calories. ∙ Given the high amount of Omega-3s, quality protein and beneficial nutrients, I believe that the benefits of eating salmon (whether farmed or wild) far outweigh the negatives for most people. ∙ 🔹 Here in Australia wild caught salmon isn’t easily accessible.
