Another new for me this week... Feng Shui! I can’t believe I have never looked into this before but I loved it💕. Unfortunately, I learned my stove is facing the exact wrong way for me but 💯 for my husband... go figure 🤣. We decided I just need to use my @instantpotofficial more so it can face the right direction😉 and I can feed myself good energy versus bad. . I brought her in to see if the house is making me sick, something in the house and/or where is it? We have had 5 inspectors and so far no one can find anything... ughhh. . Fortunately, I had another mold inspector there (who I brought down from Dallas) that wasn’t just looking for mold but other things that could be triggering for me. I didn’t plan for them to be there at the same time but it worked out perfectly🙌. He did his thing but was also open to testing where she recommended... results from him take 2 weeks so we will see🤞. . . PS - yes, I wear a mask while I’m at the house just to be extra careful 😉. This came out so good! It was fast and super simple to make.☺️ 2 bags of enoki mushrooms rinsed well. In a Wok bring 2 cups of water to a boil and blanched the enoki for about 1 minute. Set aside while making the sauce. In a sauce pan I used a little grape seed oil and sautéed a clove or two of garlic, green onions, red onions, then added low sodium soy sauce. newest discovery: there’s nothing better than homemade gluten-free sourdough. I must say, I’m a proud mama 🥰🥰 she’s my very first loaf/boule ever, and I loved every moment of bringing her into existence hehe. I’ve always been intimidated by baking bread, especially sourdough, but I found @freshisreal_’s simple sorghum sourdough recipe after seeing @taylored_wellness make it. I can’t buy gluten-free, commercial yeast-free bread ANYWHERE, and the frozen ones just don’t compare. I like knowing exactly what ingredients are being used, and that’s why I decided to give this a try. growing the wild yeast was definitely the hardest part (took me 9 days of feeding and it still wasn’t completely ready), but my sourdough turned out well anyway! the taste was surprisingly pleasant since I usually don’t like the flavor of sourdough 🙌 the process was also really fun, definitely doing this again. I want to add some dried fruit and get more rise next time tho ☺️ highly recommend checking out @freshisreal_ because her recipes are super detailed and easy to follow. she even has videos on her blog to lead you through step by step. plus I wanna thank her for answering my countless questions on dm 💕chantal is honestly so sweet, patient, informative, quick to respond, and experienced!! xoxo lastly, shoutout to @bobsredmill 👏 my sourdough was made possible using their sorghum flour, buckwheat flour, arrowroot starch, and potato starch!

🍜 Thai Coconut Curry Noodles ⏲ Under 30 mins | Serves 2-3 Lately been obsessed with @hopefoods hummus 😍 & thought their Thai Coconut Curry Hummus would be DELICIOUS in some noodles 😋 So I chopped up some veggies, sautéed them, threw them in with some @eatbanza spaghetti, added in my hummus & called it a day 🙌🏼 Quick, easy & oh VEGAN 💁🏽‍♀️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deets👇🏼 ▫️1/2 container Spaghetti (@eatbanza) ▫️1 container Thai Coconut Curry Hummus (@hopefoods) ▫️1 cup reserved Pasta Water ▫️3 cloves Garlic, minced ▫️1 tsp Ginger, chopped ▫️Baby Carrots, sliced ▫️Baby Bok Choy, chopped ▫️Toppings - Green Onions, Zesty Sprouts (@wholefoods), Sesame Seeds ⠀⠀⠀⠀⠀⠀⠀⠀⠀ How To❓ ▫️Start off by prepping your veggies (use as much as you desire). Cook your pasta according to package instructions. ▫️Then in a pan, add in some sesame oil (or any other oil you like) & add in your carrots, garlic, & ginger. Sauté for about 2-3 mins. Then add in your baby bok choy & sauté for another minute. Set your veggies aside. ▫️Once your pasta is ready, drain out the water, reserving about a cup. To your empty pot, add back your pasta, the 1 cup reserved water, hummus, & your sautéed veggies. Simmer & cook on low-medium for 3 mins. ▫️Serve in bowls, topped with fresh green onions, zesty sprouts, & sesame seeds. {Recipe video tutorial in story highlights}

One of our favorite weekly night dinners is Fajitas! I came up with my own fajitas seasoning last summer when we were doing a round of whole30 because you can hardly find a pre-made spice mix that doesn’t have sugar in it. Well, sometimes you just have to make your own! I had several people wanting this mixture when I posted it last time so decided to share this evening as well! See the next few pictures of our fajitas spread tonight as well as the spices I use. I also add salt & pepper as well. Enjoy 🌶🍽
